Carrot Cake

Simple, sweet, moist and flavorful, you would never guess these were sugar & gluten free! Top it with an ultra-creamy cream cheese frosting and you have an incredible Carrot Cake!
  1. Prepare Classic Yellow Cake Mix as directed on package and add 1/2 cup walnuts, 1/2 cup shredded carrots, 1 tsp cinnamon, & few drops of carrot cake extract to the cake batter.

    Frosting

  2. Whip together 8 oz cream cheese, 1 tbsp heavy cream/milk, 1/2 cup powdered sweetener (sweeten to taste), 1/2 tsp vanilla extract until fluffy.

  3. Top your cake with cream cheese frosting and finish it off with a sprinkling of crushed walnuts and peeled carrot.
