Lemon Cake

HELLO Sunshine–Brighten your day with a simple lemon cake topped with a tart lemon glaze!  
  1. Prepare Classic Yellow Cake Mix as directed on package — except use only 1/4 cup milk/unsweetened almond milk, add 4 tbsp lemon juice, 1 tbsp lemon peel (dried or fresh), 2 tbsp sour cream.

    For a Glaze

  • Mix 1/2 cup powdered sweetener with 3 tbsp lemon juice.
          For a cream cheese frosting
  • 8 oz cream cheese
  • 1/4 cup sweetener
  • 1/2 tsp vanilla
  • 2 tbsp lemon juice.
