Strawberry Cake

If you are looking for an easy, moist and flavorful strawberry cake recipe–this one's for you! A sugar free and keto-friendly homemade cake, made with freeze dried strawberries and topped with a glaze.

What you will need:

  • 1/2 cup milk or heavy cream

  • 1/2 cup freeze dried strawberries, sliced or crushed (or 1/2 cup fresh chopped strawberries)

Glaze:
Combine 1/2 cup powdered sweetener with 3 tbsp water. If you would like a thicker glaze, add more liquid in increments of 1/2 tsp.
Crumb Topping:
Crush 1/2 cup of freeze dried strawberries and sprinkle on top of the glaze. 

Directions:

  1. Preheat the oven to 325°F.

  2. Prepare Cake Mix as directed on the package.

  3. Add 1 pack sugar free strawberry pudding, dry mix.

  4. Combine the freeze dried (or fresh strawberries).

  5. Bake for 45 min or until an inserted toothpick comes out clean.

  6. Remove from the oven and let cool before removing from the pan.

  7. Pour the glaze over the cooled cake and sprinkle crushed freeze dried strawberries.

  8. Enjoy!
