Strawberry Cake

If you are looking for an easy, moist and flavorful strawberry cake recipe–this one's for you! A sugar free and keto-friendly homemade cake, made with freeze dried strawberries and topped with a glaze.
What you will need:
- Classic Yellow Cake Mix
- 1 pack sugar free strawberry pudding, dry mix
- 3 eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup milk or heavy cream
- 1/2 cup freeze dried strawberries, sliced or crushed (or 1/2 cup fresh chopped strawberries)
Glaze:
Combine 1/2 cup powdered sweetener with 3 tbsp water. If you would like a thicker glaze, add more liquid in increments of 1/2 tsp.
Crumb Topping:
Crush 1/2 cup of freeze dried strawberries and sprinkle on top of the glaze.
Bake This Way:
- Preheat the oven to 325°F.
- Prepare Cake Mix as directed on the package.
- Add 1 pack sugar free strawberry pudding, dry mix.
- Combine the freeze dried (or fresh strawberries).
- Bake for 45 min or until an inserted toothpick comes out clean.
- Remove from the oven and let cool before removing from the pan.
- Pour the glaze over the cooled cake and sprinkle crushed freeze dried strawberries.
