Chocolate Chip Cookie Cheesecake

Low-carb. No sugar added. Simple, elevated, and worth making again.

There’s something about the combination of a soft cookie base and a creamy cheesecake layer that just works. This version keeps it simple using our Chocolate Chip Cookie Mix. to create a dessert that feels indulgent without the extra sugar or complicated steps. Perfect for when you want something a little different… but still easy. 

What You Need:

For Filling:

  • 8 oz cream cheese
  • 1/3 cup sweetener
  • 1 egg
  • 1/2 tsp vanilla extract

Bake This Way:

 

  1. In a bowl, combine the Chocolate Chip Cookie Mix., melted butter, and vanilla. Mix until a smooth, pliable dough forms.
  2. Freeze the cookie dough for at least 30 minutes prior to baking. You can do this while you preheat the oven.
  3. Preheat the oven to 350°F. 
  4. Press about ¾ of the dough evenly into the bottom of a lined baking pan
    (or divide into a 12-cavity muffin pan for individual portions).
  5. In a separate bowl, mix the cream cheese, sweetener, egg, and vanilla until smooth and creamy. 
  6. Pour the cheesecake filling over the cookie base, spreading evenly.
  7. Crumble the remaining cookie dough over the top.
  8. Bake for about 20 minutes, or until the top is lightly golden and set.
  9. Remove from the oven and allow to cool before serving (this helps the layers set perfectly).
  10. Enjoy.
