Chocolate Chip Cookie Cheesecake

There’s something about the combination of a soft cookie base and a creamy cheesecake layer that just works. This version keeps it simple using our Chocolate Chip Cookie Mix. to create a dessert that feels indulgent without the extra sugar or complicated steps. Perfect for when you want something a little different… but still easy.
What You Need:
- 1 Chocolate Chip Cookie Mix
- 1/2 cup butter, unsalted
- 1/2 tsp vanilla extract
- 1 egg
For Filling:
- 8 oz cream cheese
- 1/3 cup sweetener
- 1 egg
- 1/2 tsp vanilla extract
Bake This Way:
- In a bowl, combine the Chocolate Chip Cookie Mix., melted butter, and vanilla. Mix until a smooth, pliable dough forms.
- Freeze the cookie dough for at least 30 minutes prior to baking. You can do this while you preheat the oven.
- Preheat the oven to 350°F.
- Press about ¾ of the dough evenly into the bottom of a lined baking pan
(or divide into a 12-cavity muffin pan for individual portions). - In a separate bowl, mix the cream cheese, sweetener, egg, and vanilla until smooth and creamy.
- Pour the cheesecake filling over the cookie base, spreading evenly.
- Crumble the remaining cookie dough over the top.
- Bake for about 20 minutes, or until the top is lightly golden and set.
- Remove from the oven and allow to cool before serving (this helps the layers set perfectly).
