Chocolate Glazed Coconut Macaroon

One of our grandmother's favorite cookies was the moroccon macaroon! This coconut macaroon cookie was developed with her in mind, leaving out all the sugar but delivering on the flavor!  Soft and chewy on the inside, crisp and golden on the outside with a drizzle or dip of sugar-free chocolate for the perfect coconut macaroon!
  1. Prepare the Cookie Mix as directed on package and bake in muffin pan, grease liberally it not using a silicon based pan.

  2. Once baked and cooled, melt 1/3 cup sugar-free chocolate chips and drizzle on top of the coconut macaroon and/or dip the bottoms and place on parchment paper or silicone mat to cool. 

  3. Enjoy!
