What you need
- 1 Chocolate Cake Mix
- 1/2 tsp baking soda
- 1/2 cup milk
- 1/2 cup avocado oil
- 1/3 cup sour cream
- 4 large eggs
- 1 tsp vanilla extract
- 3/4 cup sugar-free chocolate chips, melted
For the Glaze
- 1/4 cup allulose
- 1-2 tbsp liquid, we used milk & water for a lighter glaze
- 1/2 tsp peppermint extract (start with 1/4 tsp and adjust to your liking)
Bake This Way
- Preheat the oven to 350°F.
- Combine all the ingredients, except the milk chocolate, in a medium bowl until fully incorporated.
- Melt the chocolate in the microwave in 30 second intervals or on stovetop, stirring in between. Mix the melted chocolate with the cake batter.
- Generously spray, or line with parchment, a 8x8 baking dish. Pour the cake batter into your baking dish and bake in the oven for 35 minutes.
- After 35 minutes, drop the temperature of the oven to 330 for 15-20 minutes or until a toothpick inserted on center comes out clean.
- Remove from the oven and let cool prior to serving.
- Enjoy!
Notes: Add as much or as little peppermint extract as you like. If you choose to add it to both the cake batter and the glaze, we recommend 1/4 tsp in each. For those who may not enjoy peppermint but want to create a festive treat, we suggest you begin with 1/4 tsp in either the glaze or cake batter, but not both. Always taste test as you go along.
