Add the peppermint to the cake itself or add it to a simple glaze drizzled atop the cake.

What you need

  • 1 Chocolate Cake Mix
  • 1/2 tsp baking soda
  • 1/2 cup milk
  • 1/2 cup avocado oil
  • 1/3 cup sour cream
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup sugar-free chocolate chips, melted

For the Glaze

  • 1/4 cup allulose
  • 1-2 tbsp liquid, we used milk & water for a lighter glaze
  • 1/2 tsp peppermint extract (start with 1/4 tsp and adjust to your liking)

Bake This Way

  1. Preheat the oven to 350°F.
  2. Combine all the ingredients, except the milk chocolate, in a medium bowl until fully incorporated.
  3. Melt the chocolate in the microwave in 30 second intervals or on stovetop, stirring in between. Mix the melted chocolate with the cake batter.
  4. Generously spray, or line with parchment, a 8x8 baking dish. Pour the cake batter into your baking dish and bake in the oven for 35 minutes.
  5. After 35 minutes, drop the temperature of the oven to 330 for 15-20 minutes or until a toothpick inserted on center comes out clean.
  6. Remove from the oven and let cool prior to serving.
  7. Enjoy!

Notes: Add as much or as little peppermint extract as you like. If you choose to add it to both the cake batter and the glaze, we recommend 1/4 tsp in each. For those who may not enjoy peppermint but want to create a festive treat, we suggest you begin with 1/4 tsp in either the glaze or cake batter, but not both. Always taste test as you go along.
