Italian Sandwich Cookies

Why visit the bakery when you can now make your favorite Italian cookies at home! Low-carb, sugar-free & gluten-free, these thin, buttery cookies are held together with a sweet, seedless raspberry jam. 
  1. Prepare Cookie Mix as directed on package

  2. Roll cookie dough thin and use any shape cut outs.

  3. Once baked and cooled, drop sugar-free jam into the center of your cookie, as much or as little as you like, and top with another cookie. You can fill with any flavor jam or even a hazelnut chocolate! 

  4. While cookies cool in refrigerator, melt 1/2 cup sugar-free chocolate chips.

  5. Let the cookie cool. Once cooled and out of the pan, scoop your preferred filling into each bite size cookie shell. Here we have sugar-free vanilla pudding topped with chopped strawberries. 

  6. Carefully dip each sandwich cookie into the chocolate and lay flat on parchment paper or silicone mat to harden. Add on: decorate with sprinkles or crushed nuts.
