Keto Matcha Sugar Cookies

Elevate your classic no-sugar cookie mix with a vibrant green twist! Matcha isn’t just beautiful - it’s packed with antioxidants and naturally boosts energy without the jitters of coffee. These cookies are soft, subtly sweet, and perfect for anyone following a low-carb or keto lifestyle.

What You Need

For the cookies:

  • 1 No Sugar Cookie Mix
  • 1 1/2 tsp matcha powder (adjust to taste)
  • 1 large egg
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 tsp vanilla extract

Bake This Way

  1. In a mixing bowl, combine the cookie mix, matcha powder, butter, egg, and vanilla. Mix until a smooth dough forms. Taste and adjust matcha if you want a bolder flavor.
  2. Preheat oven: 350°F (175°C). Line a baking sheet with parchment paper.
  3. Chill dough (optional but recommended): Cover and chill for at least 30 minutes. This helps cookies keep their shape and stay soft inside.
  4. Scoop dough into 1–inch balls and place on the prepared baking sheet. Flatten slightly if desired.
  5. Bake 12-15 minutes, until edges are lightly golden. Don’t over bake - cookies stay soft.
  6. Let cookies cool on the baking sheet for 10 minutes before moving. 
  7. Enjoy. 

Tip: Matcha has a delicate, grassy flavor, so start with 1 tablespoon and adjust gradually. Pair with a sprinkle of sugar-free white/milk chocolate chips or a dusting of extra matcha for an elegant finish.
