Matcha Velvet Cupcakes
Soft, tender, and vibrantly green, these Matcha Velvet Cupcakes are a delightful twist on our classic yellow cake. Naturally sweet, low-carb friendly, and bursting with the earthy flavor of matcha, they’re perfect for a cozy afternoon treat or special occasion.
What You Need
- 1 Classic Yellow Cake Mix
- 1 tbsp matcha powder (or more for a bolder flavor)
- 3 large eggs
- 1/4-1/2 cup milk, less will give you a denser consistency.
- 1/2 cup unsalted butter or avocado oil
- 1 tsp vanilla extract
Bake This Way
- Preheat oven: 350°F (175°C). Line a muffin pan with cupcake liners or grease a small cake pan.
- In a large bowl, combine cake mix, matcha powder, eggs, vanilla, milk, and butter (or oil). Mix until smooth. Taste and adjust matcha for a stronger flavor.
- Pour batter into cupcake liners or cake pan, filling about 2/3 full.
- Bake: Bake until a toothpick inserted in the center comes out clean.
- Cupcakes: 25–30 minutes
- Small cake: 30–40 minutes
- Let cupcakes or cake cool in the pan for 10 minutes, then transfer and enjoy!
Tip: I enjoy the the slightly “corn muffin” flavor matcha can add, but if you would like to balance it you can use finely sifted matcha and consider adding a touch of almond extract or lemon zest in place of the vanilla.
